Elk Burgers!



Take 1 pound of ground elk and place in a bowl. Coat thoroughly with lemon pepper and onion salt. Lightly top with chili powder, form into patties and smoke over hickory chips at medium heat for 20 minutes, turning only once at 10 minutes. After turning, brush lightly with your favorite sauce or melted butter. Enjoy!

Recipe: Waffle Sticks

It may come as a surprise to you, but the ragamuffinwriter knows his way around the kitchen. In fact, some of my culinary creations are quite beloved within my small circle of influence.

Today I want to share with you a breakfast recipe that is a favorite of the little ragamuffins: Waffle Sticks.

They're called Waffle Sticks because the waffle iron I use molds the waffles into seamed strips that can be cleanly separated by hand and dunked in the syrup of one's choice, but I imagine that this recipe will work with any Belgian-style waffle maker.

Ingredients
Dry
Flour - 2 cups
Sugar - 2 TBS
Baking Powder - 1 TBS
Salt - 1 TSP
Cinnamon - 1/4 TSP (or to taste)
*add 1/8 TSP of Nutmeg, if desired

Wet
Milk - 1 3/4 cups
Vegetable Oil - 1/3 cup (I use safflower oil)
Eggs - 2
Vanilla Extract - 1/4 TSP (or to taste)

Combine the wet and dry ingredients in separate bowls. Then slowly mix by hand both bowls' contents together until just blended. With your Begian-style waffle iron preheated and ready to cook, pour in the batter (approximately 1/2 cup) and cook for approximately 6 minutes, 15 seconds. Remove promptly and enjoy!
